Brown or brown rice is very healthy. It is rich in fiber and vitamins, is quickly absorbed and is suitable for dietary nutrition. This valuable product can be used to prepare a wide variety of dishes, from salads to side dishes. Rice goes well with meat, fish, poultry, seafood, vegetables and fruits.

- Salad with brown rice and vegetables:
- - 0.5 cups brown rice;
- - 1 sweet pepper;
- - 1 small cucumber;
- - 2 tbsp. tablespoons of chopped walnuts;
- - 0.5 onions;
- - parsley;

- - 4 tbsp. tablespoons of olive oil;

- - 400 g zucchini;
- - 2 small eggplants;

Instructions
Step 1
When choosing recipes with brown rice, keep in mind that it takes longer to cook than regular brown rice. To speed up the process, the rice should be rinsed in several waters and then soaked for 2 hours. If time permits, leave the soaked grains overnight; after such processing, the rice will cook quickly and will be very crumbly. When cooking, observe the proportions: 1 part of rice requires 2 parts of water.
Step 2
Salad with brown rice and vegetables
Brown rice is very good for making salads. Its grains retain the required density and have a richer flavor. Squeeze the juice from the lemon and orange, fry the peeled walnuts in a dry frying pan and grind in a mortar. Boil the pre-washed and soaked rice in salted water. Cool the cereal. Peel the bell peppers from partitions and grains, cut into very thin strips. Chop fresh cucumber in the same way. Chop the onion into thin half rings and scald with boiling water. Chop the parsley.
Step 3
Put rice in a salad bowl, add vegetables, mix. Pour orange and lemon juice into a jar with a tight-fitting lid, add olive oil, chopped parsley, salt and freshly ground black pepper. Shake the jar well and pour the resulting sauce over the salad. Toss the dish, garnish with fresh parsley sprigs and serve.
Step 4
Rice with chicken and vegetables
Brown rice can be used to make a hearty and healthy dish with dietary chicken. Rinse the rice, soak for 2-3 hours, and then cook in salted water. Peel the chicken fillet from films and fat, rinse and pat dry with a paper towel. Cut the chicken into cubes, chop the garlic in a mortar. Heat vegetable oil in a skillet and fry the chicken and garlic in it. Place the sliced leeks with the chicken, then add the green peas and finely chopped celery. Simmer everything until the vegetables are soft. Add soy sauce, salt, freshly ground black pepper. Place the rice in a skillet, heat for a few minutes, and then serve. A good accompaniment to this dish is a green salad.
Step 5
Rice garnish with vegetables
This sophisticated side dish can be served with grilled or oven-baked meats. Rinse the groats, soak for a couple of hours and cook in salted water. Chop the eggplants, zucchini and bell peppers and fry in hot vegetable oil along with chopped garlic. Pour boiling water over the tomatoes, remove the skin, coarsely chop the pulp and add to the vegetables. Add chopped parsley, salt and pepper and simmer until tender. Add rice to the pan, stir and heat for 5 minutes under a closed lid. The garnish is ready.
