Step 1
Prepare the beef tongue: free from fat, hyoid bone, muscle tissue. Rinse your tongue thoroughly so that there is no blood and mucus left. You can soak your tongue in cold water for 2-3 hours to remove any residual blood.

Put the prepared tongue in cold water and cook over low heat for 2 to 4 hours (this range is determined by the hardness of the meat). After an hour and a half of cooking, add salt, carrots and onions cut into pieces to the water. Add parsley and bay leaves.

Transfer the finished boiled tongues to a bowl of cold water and remove the skin from them. Cut the tongue lengthwise into wide pieces before serving. As a side dish, mashed potatoes and green peas are suitable for the tongue. Serve with a sauce such as horseradish and vinegar.

To prepare the sauce, you will need horseradish root 300g, vinegar 9% -250ml, water -450ml, sugar, salt.
