Beef kidneys in sauce Peel the kidneys from fat and films, put in a saucepan, cover with cold water and bring to a boil. After that, drain the water, wash the kidneys, fill with fresh water and cook until tender for 1, 5-2 hours. In the broth obtained by boiling the kidneys, prepare the sauce. To do this, fry the flour until dark brown, dilute in 3 cups of hot broth and simmer over low heat for 5-10 minutes. Cut the boiled kidneys into small slices, mix with finely chopped and fried onions and fry together for about 2-3 minutes. Then transfer the kidneys to a shallow saucepan, add the fried potatoes cut into wedges, cucumbers, bay leaves, pepper and pour over everything with the prepared strained sauce, cover and set to simmer for 30-40 minutes. Sprinkle the finished dish with fresh herbs and serve.

Beef kidneys in sour cream Cut the kidneys into two parts, cover with cold water and soak for 2-3 hours, every hour, changing the water. Then put them in a saucepan, cover with cold water and bring to a boil. Drain, fill with new water and bring to a boil again. Repeat the procedure 2-3 times. Remove the finished kidneys from the pan, wash, cut into thin slices and lightly fry. Do the same with carrots, potatoes, and turnips. Put vegetables and kidneys in a pot, add chopped cucumbers, salt and pepper, pour sour cream with tomato paste, put chopped garlic and simmer in the oven until tender.
Step 3
Beef kidneys "Ural style" Clean the kidneys from fat and films, cut in half, wash thoroughly, cover with cold water and leave for 4-5 hours. Rinse again and boil for 2 hours. Cut the boiled kidneys into slices, place in a pot, add diced potatoes, fried vegetables and mushrooms. Season with salt, pour over with wine, put on low heat and simmer until tender.
