Rinse the offal thoroughly under running water. Then put it in a saucepan and cover with water. Leave the kidneys in the pot for 4 hours, changing the water every hour.

If you don't have time to soak, you can use baking soda to eliminate the offal odor. To do this, make deep cuts on the kidneys, pour soda into them and leave them for 1-1.5 hours. After the allotted time, thoroughly rinse the kidneys under running water.

Pour the soaked kidneys with clean water and bring to a boil. After a few minutes, drain the broth and refill the pan with clean water, bring to a boil again and drain after a few minutes. Repeat this procedure 3 more times - thanks to this, the kidney dish will turn out to be even more delicate and pleasant to the taste.

in a frying pan or oven, simmer for at least 30 minutes. When cooking, it is not recommended to mix them with other offal and any meat, as the kidneys change their taste. However, they go well with a variety of vegetables, herbs and spices that will emphasize the unusual taste of the kidneys.
