Kutabs are thin Azerbaijani pies made in the shape of a semicircle. Most often, kutabs are cooked with meat, but I offer you a vegetarian option - with herbs.

It is necessary

  • - wheat flour - 2 glasses;
  • - water - 1/2 cup;
  • - greens - 100 g;
  • - salt - 1/2 teaspoon.

Instructions

Step 1

In a bowl with wheat flour, add 1/2 part of warm water and salt. While stirring with a fork, gradually add the rest of the water to the mixture. Transfer the resulting mass to a prepared work surface and knead a rather tough dough out of it. Once it's done, cover it with a clean tea towel and leave it alone for half an hour.

Step 2

Then, after thoroughly rinsing, chop the herbs with a knife into small pieces. By the way, in order to cook kutabs, you can use absolutely any greens, even sorrel. In other words, while preparing this dish, you can give free rein to your imagination and experiment. Also, if desired, you can add feta cheese to the filling.

Step 3

Cut the rested dough after kneading so that you have 4 equal pieces. Taking one of them, turn it into a rather thin layer. Place the prepared green stuffing on half of the rolled flat cake. After sprinkling the laid out mass with salt, cover it with a free edge and fix it with a fork or just with your fingers. When forming kutabs, it is very important that there is no air in them. Make pies from the rest of the dough in exactly the same way.

Step 4

In a clean and rather large frying pan, fry the resulting pies on each side for about 2-3 minutes. Kutabs are ready! Brush them with butter, then serve immediately. This dish goes well with yogurt and sour cream.
