Lagman is a traditional Uzbek noodle soup. In the original recipe, it is cooked with lamb in a cauldron, with a lot of fat tail fat. But many people do not like such a fatty dish. Therefore, housewives often replace lamb with light chicken meat.
Delicious lagman. The secret is in the noodles
Special noodles are used to prepare delicious and satisfying lagman. These are not round long spaghetti, but flat wide durum wheat pasta. The width of flour products is from 30 to 50 millimeters. Usually, the correct noodles can be found from Italian producers. But if there is no suitable one in stores, it is not difficult to make pasta yourself. For this you will need:
- egg (1 pc.);
- water (1 glass);
- salt (to taste);
- flour (3 glasses);
- soda (1/2 teaspoon);
For the noodles, you need to knead the dough from the egg, water, soda and 1.5 glasses of water. Pour the remaining flour onto the table and knead the tough dough. Roll it into thin cakes, which must be quickly fried in a pan without oil (for 1-2 minutes). This is done so that the noodles in the lagman do not stick together. Allow the cakes to cool and cut into wide, long strips. The cooking time for such noodles is 5-7 minutes, so you need to put it in the soup at the very end of cooking.
Chicken lagman can be served with thin pita bread, which is easy to make at home from the dough left over from the noodles. Roll it out thinly, quickly fry in a pan and sprinkle with seasonings.
Lagman with chicken - quick and easy
The Uzbek soup is prepared in a saucepan with thick walls or in a cauldron. The amount of ingredients for 2 liters of water is as follows:
- potatoes (medium size - 6 pcs.);
- carrots (medium size - 2 pcs.);
- chicken breast (2 pcs.);
- garlic (2 cloves);
- tomato pata or ketchup (2 tablespoons);
- onions (1 large or 2 small heads);
- noodles (ready-made or homemade - 300 g);
- spices (salt, pepper, curry, oregano, basil - to taste);
- olive oil (2-3 tablespoons).
If you like more fatty foods, take not the breast for the lagman, but the legs or thighs. And fry them in more oil.
First, fry the chicken with garlic and olive oil until golden brown. Add spices, finely chopped onions, grated carrots to it. Then there are 2 tablespoons of tomato paste or ketchup if you like more savory dishes. When the vegetables are browned, add 2 liters of boiling water and the potatoes, cut into small cubes. 5 minutes before cooking - noodles. Lagman is ready.
Lagman's recipe can be easily modified depending on what ingredients are in the refrigerator. Instead of chicken breast, you can take pork, beef, even mushrooms. In summer, add fresh tomatoes, peppers, herbs to vegetables. Do not be afraid to experiment, and then every meal in your family will be long-awaited and original.
