Central Asian cuisine is famous for its delicious national dishes all over the world. Lagman is one of them, which is elongated noodles with a fragrant gravy of meat and vegetables. Traditionally, lagman noodles are made from homemade dough. A simplified recipe uses ready-made noodles from the store.

It is necessary

  • - Egg noodles or spaghetti - 800 g (2 packs);
  • - Meat (beef or lamb) - 600 g;
  • - Onions - 3 pcs.;
  • - Carrots - 3 pcs.;
  • - Large tomatoes - 3 pcs. or tomato paste - 2 tbsp. l.;
  • - Green radish - 1 pc.;
  • - Turnip - 0, 5 pcs.;
  • - Bulgarian pepper - 3 pcs.;
  • - Potatoes - 5 pcs.;
  • - Garlic - 4 cloves;
  • - Fresh cilantro - 0.5 bunch;
  • - Star anise spice (star anise) - 2 pcs. (optional);
  • - Ground black pepper;
  • - Salt;
  • - Vegetable oil;
  • - Kazan.

Instructions

Step 1

First, let's prepare the meat gravy. Rinse the meat under running water and cut into small pieces with a side of about 1.5 cm. Peel the onions, carrots, radishes and turnips. Cut the onion into half rings, and chop the rest of the vegetables into medium-sized cubes of the same size. Remove the stalks and seeds from the bell pepper and chop the same cubes.

Pour vegetable oil into the cauldron and heat it well. Add the meat and stir fry until a blush appears. Add the onion and fry it with the meat for a few minutes until translucent.

Step 3

Next, you need to put the remaining chopped vegetables - carrots, bell peppers, radishes and turnips. Mix everything well and fry for 5-7 minutes.

Step 4

Remove the husks from the garlic and chop into thin rounds. If using tomatoes, cut them into cubes and add to vegetables and meats. If tomato paste, then put it together with garlic in a cauldron, stir and fry for a couple of minutes.

Step 5

Then add water. You need as much water as you would like the gravy to be thick. Typically, a given amount of vegetables and meat requires about 2-2.5 liters. Bring to a boil, add star anise, salt and black pepper, reduce the temperature and simmer for 1.5 hours with the lid closed.

Step 6

Peel the potatoes 40 minutes before the end, rinse, cut into small cubes, lower them into a cauldron. Cook the gravy with the potatoes until tender, at the lowest temperature.

Step 7

Meanwhile, pour water into a separate pot, boil it, add salt and lower the noodles or spaghetti. Bring to a boil again, stirring occasionally, and simmer over medium heat for as long as indicated on the package. Throw the finished noodles in a colander to drain excess liquid.

Step 8

Before serving, place the noodles in deep bowls, top them with gravy, sprinkle with chopped cilantro and invite everyone to the lagman table.
