Manty is an oriental dish. It is popular among the peoples of Central Asia, Turkey, Pakistan, etc. Manty are very similar to Russian dumplings, but their difference lies in the fact that they are steamed and the meat is not twisted into minced meat, but is simply chopped finely. The filling can be made from poultry, pork, lamb, beef, various vegetables (for example, pumpkin) can be added to it, which, when boiled, will make the dough softer and more tender.

- 1 egg
- 1 tsp salt
- 0.5 cups of water.
- For minced meat: 1 kg of meat
- 500 g onions
- 0.5 cups salted water (1 teaspoon salt)
- 1-1.5 tsp black pepper
- 100-150 g fat tail fat.

Step 1
Prepare the dough. To do this, mix flour, salt, eggs, add a little water and knead a hard dough. Form a ball out of it, cover it with a towel or napkin and leave for 30 - 40 minutes. After this time, roll it into a layer 1 - 2 mm thick. Cut into 10 x 10 cm pieces.
Step 2
Prepare the filling. Take the meat and cut it into small pieces. You can use more than one variety, but several. For example, add poultry or pork to beef. Then add pepper, finely chopped onion, wild garlic, a few teaspoons of salted water to the filling. To make the minced meat juicy, fat tail or interior lard, cut into small pieces, is added to it. You can use lard, but this will affect the taste and aroma of the dish.
Step 3
Blind the dough, lay out 1 tbsp. l. fillings. Pinch the edges from above. To prevent the manti from drying, cover them with a napkin.
Step 4
Steam the manti. To do this, lay them out on special grids (cascans) so that they do not come into contact with each other. Sprinkle with cold water, cover and cook for 45 minutes. During cooking, you can pour hot water a couple of times to keep them from drying out. You can cook manti for 25 - 30 minutes. And you can first fry them on all sides until a golden crust is formed, and only then place them in a cascan manti. In this case, you can fold the manti in several layers and not be afraid that they will stick together. The cooking time is also reduced to 20 - 25 minutes.
Step 5
Season the manti with sour cream or cover with broth and sprinkle with black pepper and herbs. This dish goes well with hot sauces. You can serve a salad of peppers, tomatoes and garlic, seasoned with vegetable oil.
