Step 1

Take some warm water, add sugar, yeast and 2-3 pinches of flour. Stir, cover with a towel or napkin. Leave it on for 15-20 minutes until foam forms.

Add the remaining water and salt to the resulting dough. Stir in flour and add butter.

Knead the dough. It shouldn't be too steep and a little sticky. The less you knead the dough, the more porous your baguette will be.

Form the baguettes: a long and narrow bun with several parallel slashes. Place them on a floured baking sheet. Cover with a towel and leave to rise in a warm place until the baguettes have grown significantly (15 to 90 minutes).

Step 5

While the bread is rising, preheat the oven to 200-240 degrees Celsius. Place a container of water at the bottom of the oven to generate steam. Steam the baguettes for 10 minutes. Then remove the container of water and continue baking for another 10-15 minutes.

Transfer the finished baguettes to a plank or wire rack to cool.
