Ingredients:

  • Cottage cheese - 200 g;

  • Wheat flour - 170 g;

  • Lemon juice;
  • Butter - 50 g;
  • Jam from apricots - 150 g;
  • Lemon zest;
  • Corn flour - 20 g;
  • Canned peaches - 0.5 kg.

Preparation:

  1. Take jam and rub it through a sieve. You need one large, full spoonful of jam, without pieces or grains, to coat the cake after baking. He must be put aside.
  2. Then, in another container, combine the softened butter, lemon zest and the remaining jam with pieces. Beat this mass very well so that it becomes light. After that, you need to add granulated sugar and beat everything thoroughly again.
  3. Put the grated cottage cheese into the resulting mass and mix everything very well again, using a mixer, the speed must be set to maximum. As a result, the mass should become smooth and homogeneous. Then you need to add a chicken egg to the container and mix everything well again. Then you need to do the same with the second egg.
  4. Pour wheat and corn flour, as well as baking powder into the resulting liquid mass. Then it must be kneaded until a dough is formed.
  5. Grease a baking dish (approx. 23-28 centimeters) with oil and place the dough in it. Place the peach halves on top and submerge them a little. Then put the form in an oven preheated to 170 degrees for 45 minutes.
  6. After the finished cake has cooled, its surface should be greased with the left jam without pieces, which will need to be mixed with lemon juice. Heat the mass a little if necessary. It is best to lubricate with a brush.
