You can also enjoy peaches fresh, but it happens that even among ripe fruits there are a couple of not very successful brothers. You should not be upset, paraphrasing the well-known saying, "if life slipped you not very good peaches, bake a pie."

Step 1
Make a dough. Pour flour into a deep bowl, salt, add chilled butter crushed into cubes. Mix well by crumbling the mixture with a knife or food processor.

Pour in cold water and quickly knead the dough. Divide the dough in two, forming discs. Wrap with cling film and refrigerate for at least 30 minutes.

If you are not going to bake a second biscuit in the next few days, then one part of the dough can be frozen and stored in the freezer for up to 3 months.

Preheat oven to 200 ° C. Line a baking sheet with parchment paper. Prepare the filling. Remove the seeds from the peaches.

Cut the fruit into thin slices. Chop the basil leaves finely, leaving a couple of leaves to garnish and stir in the soft goat cheese.

Place the chilled dough on a cutting surface and roll into a circle. Transfer carefully to a prepared baking sheet.

Spread the cheese filling over the entire surface of the layer, 3 cm back from the edges. Place the peaches on top.
