Step 1
For quick cooking, use chicken drumsticks. Wash and dry them. Prepare the sauce: mix grated garlic with herbs, salt and pepper. Top up with wine and oil. Rub the drumsticks with the sauce, then place them in a baking dish. Pour the rest of the sauce over the chicken. Bake the chicken in the oven at 180-200 ° C for 40-45 minutes. Garnish the finished dish with fresh basil, serve with baked potatoes or vegetable salad.
Step 2
For a festive table, you can bake whole chicken with Provencal herbs. With this cooking method, excess fat flows down. Grate the washed and dried chicken carcass inside and out with salt, pepper, garlic and Provencal herbs. If you want the breasts to be juicier, place some butter under your skin. Place the carcass on a tripod, cover the top with foil and place the ovens down. If there is no tripod, place the chicken on a wire rack and place it on a pre-foil-lined baking sheet to prevent dripping fat from burning and staining the oven. In this case, you will have to turn the chicken 2-3 times during baking.
Open the foil slightly at the end of cooking. If the top is not brown, remove it and bake until golden brown. Calculate the total cooking time based on the weight of the chicken, 30-35 minutes per 0.5 weight at 180 ° C. Determine the readiness by the color of the flowing juice, if it is transparent - remove the chicken from the oven and cover with foil for 10 minutes. During this time, it will finally reach readiness and be saturated with juice. After that, it can be cut into portions and served.

Chicken with Provencal herbs can be baked in a vegetable "fur coat". Wash the carcass and cut into portions. Prepare vegetables for baking: cut the onion into half rings, the olives into quarters, pour over the tomatoes with boiling water, peel and cut each into 4-6. Cut the garlic wedges in half. Mix vegetables, salt and add a teaspoon of Provencal herbs. Prepare chicken sauce: Combine butter, garlic and a spoonful of Provencal herbs. Dump the chicken pieces into the sauce. Place half of the vegetables in a baking dish and sprinkle with oil. Place the chicken on top and the rest of the vegetables on top. Cover the top with foil to keep the vegetables from drying out. Bake the chicken in a vegetable "fur coat" for 60-80 minutes at 180 ° C. The finished dish can be served without a separate side dish.
