Cherry Pie is a wonderful American classic. It is juicy, aromatic, sour and slightly tart. A great dessert for family gatherings over tea.
It is necessary
- - flour 200 g
- - oil 100 g
- - water 60 ml
- - egg 1 pc.
- - milk 2 tbsp. l.
- For filling:
- - frozen cherries 600 g
- - starch 4 tbsp. l.
- - sugar 200 g
- - cinnamon half a teaspoon
- - nutmeg a quarter tsp.
- - salt a quarter tsp.
- - butter 25 g
- - lemon juice 1 tsp.
Instructions
Step 1
Sift flour, mix with salt. Cut the cold butter into small cubes and rub into the flour using a blender until fine crumbs are formed.
Step 2
Add water and stir in a blender. The dough should be such that you can roll a ball out of it with your hands. If this fails, more water should be added. The dough should turn out to be rough and moist, it should be collected into a ball with your hands.
Step 3
Gather the dough into a ball on a floured surface. Take it, giving it the shape of a cake, wrap it with cling film and send it to the refrigerator for 20 minutes.
Step 4
Combine sugar, nutmeg, cinnamon and salt. Add cherry juice and lemon juice. Put on fire and bring to a boil.
Step 5
Mix the starch in a quarter glass of water, stir well to prevent lumps. Remove the saucepan with cherry juice from the heat, add starch in parts, stirring constantly with a whisk. After adding all the starch, the pan is put on fire again and brought to a boil at maximum temperature.
Step 6
Add cherries to boiling juice and keep on fire for about a minute. Then the filling is removed from the heat and butter is added to it. Everything gets mixed up. Cool the filling completely, only after that it can be transferred to the mold.
Step 7
Preheat oven to 220 degrees. Remove the dough from the refrigerator, roll it out and place in the mold. Put the cold filling in the mold to the brim and decorate with a mesh on top (you can make any other pattern to your liking).
Step 8
Put the form in the oven for half an hour. The filling will flow out, and therefore a sheet or other shape should be placed on the bottom of the oven.
Step 9
Cherry pie is best served chilled and served with a scoop of ice cream.
