Recently, the demand for it has increased sharply, because this product contains little cholesterol and at the same time has a high taste. Cooking pheasant dishes does not take much time. In the most extreme case, you can simply fry it, like any bird. But only traditional hunting dishes will help to preserve the unique taste of pheasant meat.

It is necessary

    • 1 carcass of a pheasant;
    • 2 tbsp. a spoonful of butter;
    • 30 g of fresh porcini mushrooms;
    • 1/2 cup sour cream;
    • 1 tbsp. l. flour;
    • 1 tbsp. l. tomato paste;
    • salt to taste;
    • spice;
    • gauze or fine sieve;
    • small frying pan;
    • stewpan;
    • roasting cabinet.

Step 1

Make sour cream sauce. Pour the flour into a skillet and fry until yellowish. Remove from heat and let cool. Add 1 tablespoon of butter, put it back on the heat and stir. Add sour cream without removing from the burner. Bring the sauce to a boil, salt and season.

Step 2

Cook the sauce for 4 minutes, stirring continuously. Remove from heat and strain through cheesecloth or fine sieve. Put the sauce back on the heat and bring to a boil.

Step 3

Place the whole pheasant carcass in the broiler. Add the remaining butter. Fry the carcass until half cooked. Cut the carcass into pieces. If there is no oven, you can also fry the meat in a skillet. In this case, it is better to cut it into portions.

Step 4

Place the pieces of meat in a saucepan. Add well washed and chopped mushrooms. Pour in 15-20 g of the frying liquid. Pour the sauce over the whole thing, close the lid and cook over low heat. In the absence of a special oven, the dish can be extinguished in a conventional oven.

Step 5

Separate meat and mushrooms before serving. Place the pieces of meat on a platter, surround it with mushrooms, top with the sauce and sprinkle with finely chopped parsley.

In a similar way, you can cook pheasant in tomato sauce. Similarly, fry the whole carcass in a skillet or oven until half cooked. Make tomato sauce. To do this, chop and overcook the onion. Dissolve tomato paste in a glass of boiled water and pour into a skillet. Add pepper and salt to taste. Fry over medium heat until thickened.

Step 7

Cut the pheasant carcass into portions and put in a saucepan. Add the mushrooms and pour over the sauce. If you are using an oven, you do not need to add anything else, just bring the dish to readiness. If you are cooking in the oven, add some water to the saucepan. The sauce with water should be up to half the layer of meat. In this case, mushrooms are used not as a side dish, but as part of the main dish. Boiled potatoes are most suitable as a side dish.
