Eggplant caviar with garlic

Such caviar will turn out to be tastier if the eggplants are baked over a fire. With ready-made caviar, you can prepare sandwiches, canapes, serve as a universal snack or add to spaghetti.

Ingredients:

- 1 kg eggplant;

- a bunch of parsley;

- 5 cloves of garlic;

- 3 tbsp. tablespoons of vegetable oil;

- black pepper, salt.

First, bake the whole eggplant to darken the skin. If it is not possible to make "smoky" eggplants, then cook them in the oven at 180 degrees - 25-30 minutes will be enough. Remove the darkened peel, chop the pulp with a knife.

Peel the garlic, chop with a knife or garlic press and add to the eggplant, add oil, season with salt and pepper. Chop the parsley finely and send to the rest of the ingredients. Stir - the eggplant caviar is ready to eat!

If desired, you can add aromatic spices, chopped onions, chopped tomatoes or bell peppers to the caviar.

Versatile Eggplant & Garlic Salad

According to this recipe, a low-calorie salad is obtained, it is prepared very quickly.

Ingredients:

- 2 eggplants;

- 4 red tomatoes;

- a bunch of parsley;

- 4 cloves of garlic;

- 2 tbsp. tablespoons of vegetable oil for frying and the same amount as a dressing;

- salt.

Cut the eggplants into small cubes, sprinkle with salt, cover with cold water. Thanks to this, all the extra bitterness will go away from the eggplant. After 15 minutes, rinse them, discard in a colander.

Pour oil into a preheated frying pan, fry the eggplants on it, stirring them vigorously with a spatula. The vegetables should take on a beautiful golden brown hue.

Transfer the eggplant to a paper towel to remove any remaining oil. Rinse the tomatoes and cut them into small cubes. Chop the peeled garlic, mix with oil for dressing. Chop the parsley smaller. Combine eggplant with tomato and oil in a salad bowl and serve immediately.

Eggplant rolls with garlic

Another versatile garlic eggplant appetizer is rolls. Such an appetizer will look beautiful on a festive table.

Ingredients:

- 2 eggplants;

- a small bunch of cilantro;

- 50 ml of vegetable oil;

- 5 cloves of garlic;

- pepper, salt.

Cut the eggplant into long slices lengthwise. Then soak them for 20 minutes in cold water, rinse, pat dry on paper towels. Fry on both sides in a skillet with oil until half cooked - the eggplants should become soft, but not fall apart. Sprinkle each strip with chopped garlic, immediately roll into tight rolls, without waiting for the eggplant to cool completely.

Pierce each roll with a toothpick so that they do not open during frying, fry until golden brown. Serve with fresh cilantro. If desired, garlic with cottage cheese can be used as a filling for such rolls.
