The liver is very rich in amino acids and all substances that are involved in hematopoiesis, therefore, dishes from the liver that have undergone minimal cooking are prescribed for anemia. Liver pancakes, or liverworts, are just such a dish, here the liver passed through a meat grinder is used, and liverworts are cooked, like ordinary pancakes, within a few minutes.

- Chicken liver pancakes
- 500 g chicken liver
- 1 large onion
- 1 large carrot,
- 1 egg,
- 2 tbsp. spoons of sour cream,
- 2 tbsp. spoons of corn or flour,
- sunflower oil for frying,
- salt

- Beef liver liverworts
- 0.5 kg of beef liver,
- 200 g fresh bacon,
- 4 eggs,
- flour
- salt.
- Pork liver liverworts
- 300 g pork liver
- 1/2 cup rice
- 2 onions,
- pork fat net,
- 1 glass of cream (20%),
- salt,
- ground black pepper,
- vegetable oil.
Instructions
Step 1
Chicken liver pancakes
Rinse the liver, free it from films and pass it together with the peeled onion through a fine mesh meat grinder. Grate the carrots on a fine grater and add to the liver. Then add flour, sour cream, egg, salt and pepper, mix thoroughly (corn flour should swell within 10-15 minutes). Preheat a skillet, pour in oil, lay out the pancakes and fry on both sides until golden brown.
Step 2
Beef liver liverworts
Soak the liver in water, rinse, remove films and ducts, cut into large pieces. Pass the liver and lard through a meat grinder, add lightly beaten eggs, salt, flour. Add flour in such a quantity that the consistency of the pancake dough is obtained.
Step 3
Spoon the liverworts into a preheated skillet with vegetable oil. Fry on one side, turn over to the other and cover the pan with a lid, turn off the heat and leave to rise under the lid in a warm place.
Step 4
Pork liver liverworts
Wash the liver, dry, cut into pieces and mince, salt and pepper the minced meat. Rinse the rice, boil water, put the rice and one onion there, salt, boil until tender. Combine the minced liver and boiled rice until smooth.
Step 5
Take a pork fat net, cut it into squares, place the rice and liver filling in the middle of each square, and fold it into an envelope. Put a frying pan on the fire, heat it, pour in vegetable oil, fry the liverworts on both sides and put in a deep saucepan.
Step 6
Wash the remaining onions, peel, cut into cubes, fry in a little vegetable oil and add to the liverworts with the cream. Simmer the liverworts with the onion-cream sauce for 10 minutes.
