It happens that dishes with meat become boring and boring. And I want something different, but certainly delicious. The best option in this case is a variety of vegetarian pastas. Due to the carbohydrates in their composition, this is a fairly satisfying dish. And with them it is easy to combine any vegetables for which the season is now.

- - young zucchini - 1 piece;
- - young eggplant - 1 piece;
- - cherry tomatoes - 8 pieces;
- - bell pepper - 1 piece;
- - red onion - 1 onion;
- - tagliatelle pasta - 500 grams;
- - garlic - 1 clove;
- - peeled pine nuts - 60 grams;
- - brown sugar - 15 grams;
- - lemon juice - 10 milliliters;
- - olive oil - 15 milliliters;
- - salt and pepper - according to preference.

Step 1
Grease the grill pan with olive oil and heat. In turn and in small portions, fry the prepared zucchini, eggplant and pepper on each side for three minutes. Pierce the skin of the cherry tomatoes in several places with a fork and fry whole last.
Step 2
It is important not to overdo it with frying, otherwise the vegetables will turn into porridge. The grill pan can be replaced with an oven, microwave grill or electric grill. Put the prepared vegetables in a bowl, pour over with lemon juice. Peel the clove of garlic from the films and squeeze out to the vegetables through a press. Add seasoning and mix everything. Seal the bowl with cling film and leave the vegetables alone for 10 minutes.
Step 3
Put chopped red onion in a plain skillet without oil, add a tablespoon of water and sprinkle with brown sugar. Turn on low heat and caramelize the onions until the sugar is clear and completely dissolved. There is no need to stir the onions. Then add it to the vegetables and shake the bowl several times.
Step 4
Boil the paste in accordance with the instructions, not forgetting to salt the water. Tagliatelle - wide and long strips of pasta. It goes well with large pieces of vegetables. But you can use any other favorite type of pasta. When ready, discard the tagliatelle in a colander and drain.
Step 5
Mix pasta and vegetables with caramelized onions before serving. Roast the peeled pine nuts in a dry frying pan for about 3 minutes, stirring constantly and sprinkle them over each portion. Serve the dish exceptionally hot. You can add your favorite grated cheese if desired.
