Gnocchi is an Italian dish reminiscent of our dumplings. Gnocchi can be served both as a main course and as an appetizer for a festive feast.

Ingredients:

  • Large egg - 1 pc;
  • Potatoes - 750 g;
  • Flour - 150 g;
  • Curd cheese (can be replaced with cottage cheese) - 100 g;
  • Hard cheese - 80 g;
  • Salt to taste.

Ingredients for the filling:

  • Chicken fillet (you can choose other meat) - 300 g;
  • Hard cheese - 80 g;
  • Egg - 1 pc;
  • Curd cheese (you can take cottage cheese) - 100 g;
  • Salt to taste.

For registration you will need: butter, several bunches of herbs (dill, basil, parsley, etc.).

Preparation:

  1. To complete this dish, you need to boil potatoes and meat. Rinse the potatoes and boil them in their skins. You can check the readiness with a fork. If the potatoes become soft, they are ready.
  2. Then you need to wash the chicken fillet and boil it in water, which must first be salted. Meat and potatoes for a dish can be boiled in advance so that the cooking process takes less time.
  3. As soon as the potatoes are boiled, they need to be cooled and their uniform removed. The next step is to grind the peeled potatoes on a coarse grater. If desired, cut into small pieces with a knife.
  4. Add flour to the resulting mashed potatoes. Break the egg into the mixture. Then mix everything very thoroughly. Hard cheese must be grated with a fine nozzle and poured into the potato mixture. Put curd cheese (or cottage cheese) in the same place. Add pepper and salt as desired. From all the ingredients, knead the dough from which the gnocchi will be made. Put the dough in the refrigerator and start filling.
  5. In a food processor, grind the chicken fillet, chopped into pieces, place hard and curd cheeses in the same place. Break the egg into the meat mixture. Sprinkle with salt and beat. The mixture should resemble a paste.
  6. Now you need to mold the gnocchi. To do this, you need to tear off small pieces (15 g each) from the chilled dough and roll balls from them. Crush the balls into flat cakes. Put a little filling in the middle of the cakes and pinch the dough on top with an envelope. Roll the balls on a floured board.
  7. Then the gnocchi should be boiled in boiling water (about 3-5 minutes). Serve gnocchi drizzled with melted butter and sprinkled with herbs.
