Those who do not like green cabbage soup, salads and side dishes will surely enjoy the hearty and tender spinach pie. Greens in it are harmoniously combined with eggs, cheese, sour cream and other delicious ingredients.

Healthy treat: spinach and cottage cheese pie

A nutritious meal that can be served hot or warm. Fresh or frozen spinach is used for cooking, and it does not act as a filling, but serves as the basis for a curd-cheese mixture.

Ingredients:

  • 1 kg of spinach;
  • 4 eggs;
  • 15 g butter;
  • 1 onion;
  • 125 g of cottage cheese;
  • 60 g of hard cheese;
  • 2 tbsp. l. sour cream;
  • salt;
  • a pinch of nutmeg;
  • a bunch of fresh herbs.

Sort the spinach, throwing away the trash. Wash the herbs in several waters, put in a saucepan, add a little water and cook for 5-7 minutes until soft. Place spinach in a colander and drain. Add whipped egg whites, a pinch of nutmeg. Mix everything thoroughly, pour into a mold covered with oiled baking paper, bake for 15 minutes in an oven preheated to 190 degrees.

Melt butter in a saucepan, add chopped onion and fry until golden brown. Remove from heat, mix with sour cream, finely chopped herbs and cottage cheese. Spread the filling over the spinach base and roll up. Serve warm, cut into thick slices.

Quiche with spinach and cheese

A traditional French dish that combines a crumbly dough base with a delicate aromatic filling. Serve this hearty pie warm, accompanied by rosé or cider.

Ingredients:

  • 2 bunches of fresh spinach
  • 1, 5 cups flour;
  • 100 ml of milk;
  • 2 eggs;
  • 1, 5 tsp potato starch;
  • 250 g ricotta cheese;
  • 100 g butter;
  • salt and pepper to taste.

Sift the wheat flour into a deep bowl, add salt and 70 g softened butter. Grind the mixture into crumbs with a fork. Add chicken yolk and 2 tbsp. l. milk. Knead a non-steep homogeneous dough, wrap it in foil and put in the refrigerator for half an hour.

Rinse spinach leaves, cut off tough petioles. Melt the remaining butter in a saucepan, add spinach and sauté for 2-3 minutes until soft. In a separate bowl, beat the milk, egg, protein remaining from the dough, potato starch, salt and pepper.

Roll out the dough into a thin layer and place in a greased mold so that it covers the bottom and sides. Place the mold in an oven preheated to 180 degrees for 15 minutes. Cool the cake.

Put spinach and ricotta in the egg-milk mass, mix thoroughly. Pour the filling into the mold and put the quiche in the oven again for 25-30 minutes. Remove the finished cake from the pan, cool on a wire rack and cut into portions. Serve with sour cream.

Puff pastry snail pie

The basis for simple and delicious homemade baking will be purchased puff pastry, yeast or yeast-free. Even a novice housewife can cook such a cake without any problems; it can be served hot, warm or cold.

Ingredients:

  • 350 g frozen spinach;
  • 450 g ready-made puff pastry;
  • 3 boiled chicken eggs;
  • 3 tbsp. l. grated cheese;
  • 4 tbsp. l. cream cheese;
  • a bunch of fresh herbs (parsley, celery, dill);
  • salt;
  • ground black pepper;
  • sesame seeds for sprinkling.

Defrost the spinach and puff pastry. Finely chop the greens and mix with the chopped eggs. Add 2 types of cheese, salt and black pepper to taste. Mix the filling thoroughly.

Roll out the dough into a thin layer on a floured board. Cut the dough into strips about 8-10 cm wide. Place the filling along each strip of dough, and then pinch the edges to make a long, even sausage.

Grease the mold with oil and put the dough sausages in it in a spiral, forming a snail. Cover the surface of the pie with a thin layer of melted butter, sprinkle with sesame seeds. Place the form in the oven, preheated to 180 degrees, bake the cake for 30-35 minutes.
