A person's diet should include a variety of vegetables. One of the well-known and beneficial to human health root crops - beets. Beets can be eaten raw or cooked. There is also another way to cook beets - pickling.
You will need:
- beets 500 grams,
- walnut kernels 1 cup
- cilantro seeds or greens,
- capsicum to taste
- wine vinegar 2 cups,
- allspice or black pepper 10-12 peas,
- cloves 6 pcs.,
- bay leaf 2 pcs.,
- cloves of garlic 4 pcs.,
- salt, sugar,
- lemon.
Preparation
Cooking marinade for beets. To do this, take a saucepan and pour water into it. Add wine vinegar, salt, a little sugar, allspice or black pepper, cloves. Then let the marinade boil. Turn off the heat and add the bay leaf. We are waiting for the marinade to cool down.
Wash the beets, but do not peel them. Pour water into a saucepan, when the water boils, put the beets and cook for about 2 hours (depending on the size of the beets). Let the beets cool.
Then peel the beets, cut into large slices. Place the beetroot slices in jars and fill them with chilled marinade. We close the jars with lids and store in the refrigerator.
Cut the pickled beets into cubes before serving. Cooking the beetroot sauce. Pound the garlic, nuts and peppers, seeds or greens of cilantro in a blender. Drizzle with lemon juice. Serve marinated beets with sauce in a deep plate or on a platter, garnished with lettuce.
