First you need to prepare the marinade. To do this, mix 15 grams of vegetable oil with citric acid, salt, ground pepper and finely chopped parsley.

Peel the pollock fillet from skin and small bones, if they remain, and cut into 1-1.5 cm thick and 5-6 cm long cubes. Then it must be kept for 20-30 minutes in the prepared marinade.

The tartar sauce is very simple to prepare. For its preparation, pickled cucumbers must be chopped into small cubes, then hot sauce, mayonnaise and prepared cucumbers should be mixed.
Step 4
The dough is prepared as follows. Wheat flour should be sieved 2 times and diluted with warm milk at a temperature of 20-30 degrees Celsius, stir so that there are no lumps, add a little vegetable oil and egg yolks, salt. Leave the dough for 10-15 minutes for the gluten to swell. When everything is ready, you need to beat the proteins into a fluffy stable foam and then, stirring gently, add them to the pre-prepared dough.
Step 5
Pieces of fish should be dipped into the dough, which should cover the entire piece, using a fork or a cook's game. Pieces of fish are fried in deep fat (fat) heated to 180 degrees Celsius. The fish is served in a pyramid-shaped dough, with lemon slices next to it. The sauce is served separately.
