Couscous is completely mistakenly called cereal. In fact, these golden tiny balls are closest to durum wheat pasta. And just like homemade pasta, you can make your own couscous from scratch at home.
It is necessary
- - 1 stick of cinnamon;
- - 1 bay leaf;
- - 1 kilogram of semolina;
- - 1 teaspoon of salt;
- - 1 ½ tablespoon flour;
- - 250 ml of vegetable oil.
Instructions
Step 1
Pour about 250 ml of boiled warm water into a spray bottle. Combine semolina with salt and flour in a wide bowl. Spray the mixture with liquid from a spray bottle and stir in a circular motion with your palms. The semolina should be evenly moistened and rolled into small balls.
Step 2
Place the semolina in a sieve with holes about 0.25 mm in diameter and place it over another bowl. Using a spoon or spatula, rub the wet semolina through a sieve.
Step 3
Boil a few liters of water and put cinnamon and bay leaves in them. Place cookware over the rising steam. Steam the semolina for 15 minutes, stirring constantly, preventing it from forming large lumps. Cover and cook for about 30 more minutes, stirring every 5-7.
Step 4
Put the couscous obtained from semolina in a bowl, mix with butter and gently fluff with a fork. The product obtained in this way can be kept in the refrigerator, covered with cling film, for 2-3 days.
Step 5
Return the couscous to the double boiler and cook for another 15 minutes, then strain again through a colander. Homemade couscous is ready.
