We suggest preparing an unusual dish called Bossam (보쌈). Bossam is a Korean dish made from pork belly. Bossam translates as "wrapped, wrap", as they eat pieces of meat with their hands, wrapped in lettuce, Chinese cabbage, kimchi leaves, flavored with soy paste, soy sauce or shrimp paste. Despite the fact that Bossam is a Korean dish, it is very simple and quick to prepare it.

- • Pork belly - 0.8 -1 kg
- • Onions - 2 pcs.
- • Garlic - 2 heads (8-10 cloves)
- • Ginger root - 4-5 cm
- • Twenjan soy paste - 1-2 tbsp. l (can be replaced with good soy sauce)
- • Instant coffee - 1 tsp.
- • Water - 8 glasses (approximate amount)
- • Brown sugar - 2 tbsp. l

Step 1
First you need to prepare the meat: wash it under running water, dry it a little from moisture with a paper towel. If the brisket has small bones, then they must be carefully cut in, trying not to greatly damage the structure of the meat.
Step 2
Prepare your vegetables. To do this, peel the onions and cut them into 2-4 pieces. Peel the garlic cloves from the husks and films. The ginger root must be peeled and cut into slices.
Step 3
Put meat, onions, cloves of garlic, ginger in a saucepan, and also add coffee, brown sugar, soy paste or soy sauce. Add water. The water should cover the meat completely. Put the saucepan on the fire and cook for 1–1.5 hours until cooked over medium heat.
The finished boiled brisket should be laid out on a dish, dried a little with a paper towel and cut thinly into slices. It is customary to serve Bossam with Chinese cabbage leaves, radish or radish salad and a spicy sauce, for example, Samjan.
