To make a salad of beans, carrots and bell peppers, you will need:

- 1 kilogram of beans;

- 2.5 kilograms of tomatoes;

- 1 kilogram of carrots;

- 1 kilogram of sweet pepper;

- 250 grams of onions;

- 250 grams of vegetable oil;

- 1 head of garlic;

- 1 tablespoon of sugar;

- 2 tablespoons of salt.

The beans must first be soaked, the tomatoes must be scrolled through a meat grinder, the peppers must be cut into thin slices, the onions must be cut into half rings, and the carrots must be grated. Boil vegetable oil, add beans with tomatoes to it and boil for an hour. Then you should fry the onions and carrots, putting pepper, salt and sugar in the frying. Simmer in a pan for fifteen minutes. The finished dish must be laid out in glass jars and rolled up immediately.

Garlic should be added to bean salad no earlier than three minutes before the end of the readiness of the dish.

To prepare bean salad with vinegar you will need:

- 2.5 kilograms of tomatoes;

- 1 kilogram of carrots;

- 1 kilogram of beans;

- 1 kilogram of sweet pepper;

- 0.5 kilograms of onions;

- 1 cup of sugar;

- 3 tablespoons of salt;

- ½ liter of vegetable oil;

- 2 teaspoons of black pepper;

- 1 teaspoon of vinegar.

Soak the beans for at least twelve hours before cooking. Grate carrots, cut onions into half rings, tomatoes into slices, and sweet peppers into strips. All ingredients must be put in a bowl with a wide bottom, adding salt, vinegar, sugar, pepper, oil there, mixing everything thoroughly and putting the dishes over medium heat.

After boiling, the salad must be cooked for two hours, stirring occasionally. The prepared salad is laid out in jars and rolled up.

Green beans salad

To prepare green beans salad you will need:

- 600 grams of sweet peppers and green beans;

- 1.5 kilograms of tomatoes;

- 250 grams of onions;

- 6 tablespoons of vegetable oil;

- 1 tablespoon of salt;

- 3 tablespoons of sugar;

- 1 tablespoon of 30% vinegar;

- celery, dill and parsley.

The beans must be boiled for five minutes in lightly salted water, cooled and chopped. Tomatoes need to be peeled, cut into slices, onions and peppers - cut into half rings. Add beans, salt, sugar and a little water to the vegetables.

Also, instead of pepper and tomato, you can add zucchini or eggplant to such a salad, which will give it a unique and original taste.

Vegetables must be stewed until half cooked over low heat (twenty minutes), after which herbs and vinegar are added to them. Then the finished salad is laid out in sterilized jars and rolled up. Canned green beans salad is ready for the winter.
