Bean soup

Almost every national cuisine has its own version of the soup with lamb and beans. Such dishes are distinguished by their high fat content and a large amount of spices.

To make the bean soup, you will need the following ingredients: 2 liters of broth, 500 g of lamb, 2 potato tubers, 1 carrot, 1 head of onion, 2-3 cloves of garlic, 200 g of beans, 70 g of red lentils, 2 ripe tomatoes, black ground pepper, salt, thyme, cilantro.

The soup broth is prepared in advance from lamb brain bones and pulp, onions, carrots. Before the end of cooking, bay leaf, ground black pepper and half a lemon are added to the broth. The meat is removed from the pan and cut into small pieces. Then it is fried in vegetable oil until golden brown and returned to the strained broth.

Put a saucepan with broth over medium heat and add diced potatoes to it. While the potatoes are boiling, the onions and carrots are finely chopped. After frying vegetables in vegetable oil until golden brown, they are immediately transferred to a saucepan along with finely chopped garlic. Lentils and beans are peeled and transferred to a saucepan. Scald tomatoes with boiling water and peel them off. After that, the tomatoes are cut into slices and added to the soup 10 minutes after the beans.

Salt, pepper and spices are added to taste. Before serving, sprinkle the soup with finely chopped cilantro.

How to cook lobio

Lobio, a traditional Georgian bean dish, is great for a family dinner. To prepare lobio, you will need the following products: 700 g of beef, 500 g of beans, 4 heads of onions, 600 g of tomatoes, 3-4 cloves of garlic, dill, cilantro, oregano, salt.

Pre-soaked beans are boiled until tender and kneaded with a spoon. Finely chopped beef is fried in vegetable oil in a deep frying pan. When the meat is browned, add chopped onions to it and continue frying. Tomatoes are peeled, cut into cubes and sent to the pan with meat.

Prepare the ingredients for a few minutes and add finely chopped garlic and herbs to them. After 10 minutes, the meat and vegetables are mixed with the beans and continue to cook the lobio for another 5 minutes. After that, the pan is tightly covered with a lid and removed from heat. Before serving, lobio should be infused for 15-20 minutes.
