Step 1
Mushroom filling with boiled eggs
Ingredients: mushrooms (champignons, oyster mushrooms, porcini) - 1 kg, 3-4 onions, 5-6 chicken eggs, vegetable oil (2 tablespoons), sour cream (2 tablespoons), salt.
Boil the mushrooms, chop finely. Chop the onion finely and fry it in vegetable oil (1-2 tablespoons). Mix, season with sour cream (2 tablespoons). Salt. Boil eggs, chop finely, mix. The filling is ready.
Step 2
Mushroom and Rice Filling
Ingredients: dried mushrooms 50 g, 3 onions, 1 glass of rice, salt and pepper to taste.
Rinse the dried mushrooms, add water for 2, 5 hours, cook in the same water until tender. Finely chop the finished mushrooms. Finely chop the onion and fry in vegetable oil. Stir in the mushroom mixture. Simmer over the fire for 2-3 minutes. Boil rice, cool. Stir the rice with the mushroom mixture, add salt and pepper to taste. The filling is ready.
Step 3
Green onion and egg filling
Ingredients: 1 kg of green onions, 4 tablespoons of vegetable oil, 4-5 hard-boiled eggs, salt to taste.
Chop the green onions straight with the heads. Pour oil into a frying pan, heat well, add onion, salt, stir and immediately pour into a container for filling (do not fry). Finely chop the boiled eggs and mix with green onions. Refrigerate. The filling is ready.
Step 4
Filling with raisins and nuts
Ingredients: 400 g of seedless raisins (sabza), 200 g of shelled walnuts.
Rinse the raisins in running water and dry. Grind the nuts (mince, grind in a coffee grinder or crush with a pestle). Stir in raisins. You can add some clear honey.
Step 5
Filling with cabbage
Ingredients: 1.5 kg of fresh cabbage, 4 tbsp. tablespoons butter, 4 hard-boiled eggs, salt and sugar to taste.
Chop the cabbage finely, pour into a colander, scald with boiling water, squeeze out excess water. Melt butter in a saucepan, add cabbage, stir and heat over a fire, stirring occasionally, for 10-15 minutes. Chop eggs finely, mix with cabbage, salt, add sugar to taste. Refrigerate. The filling is ready.
Step 6
Filling for pies with meat
Ingredients: 0.5 kg of beef, 0.3 kg of fatty pork, 3 onions, 3 hard-boiled eggs, vegetable oil, salt, pepper.
Meat, beef, pork, mince together with onions, salt and pepper to taste. Add cold water so that the minced meat has the consistency of sour cream, fry in vegetable oil, stirring. Throw the minced meat in a colander to drain the broth. Mix well, add chopped eggs.
From the broth, adding flour, prepare the gravy and add to the minced meat, mix. This will make the minced meat juicy. Refrigerate. The filling is ready. Leftover gravy can be used to water the patties before serving.
