During Shrovetide, each hostess seeks to please her guests and loved ones with traditional pancakes. From time immemorial in Russia, there were many recipes for the preparation of this dish. Baked pancakes are considered the tastiest and most satisfying.

- –Chicken egg (2 pcs.);
- –Wheat flour (9 tablespoons);
- –Salt and sugar to taste;
- –Fresh champignons (120 g);
- –Hard cheese (70 g);
- - ham (120 g);
- –Black pepper to taste;
- - green onions (10 g).

Step 1
Prepare the dough first. To do this, take a deep container, add eggs there. Whisk thoroughly with a mixer or blender. Next, carefully pour in the milk, which must be warmed up in advance. Pour the flour into the egg and milk mixture and stir the dough well again. Season with salt and sugar. Leave the dough to infuse for a while.
Step 2
Start preparing the baking filling. Rinse the mushrooms under running water, cut into small pieces and fry in a pan with vegetable oil until softened for about 7-10 minutes. Place the mushrooms in a separate bowl. Chop the ham in the form of thin strips, transfer to the mushrooms. Grate the cheese with fine divisions and add to the bulk. Finely chop the onion. Mix all ingredients well until a homogeneous consistency is formed. Season the filling with salt and pepper.
Step 3
Heat a deep frying pan to the optimum temperature for baking pancakes, not forgetting to grease the bottom with a piece of bacon. This procedure must be repeated before each pancake is baked. Next, pour a small amount of dough into the pan, immediately put a couple of tablespoons of the filling, and pour a little more dough on top. Press the filling with a wooden spatula, spreading the mixture evenly over the pancake.
Step 4
When you feel that one side of the pancake is baked enough, it is worth turning the pancake over to the other side. Press lightly on the pancake with a spatula and continue cooking for about 2 minutes.
