Hearty pancakes with ham and mozzarella are perfect for breakfast and for any other meal. They are airy, tasty and very beautiful due to the basil.
It is necessary
- For pancakes:
- - milk - 300 ml;
- - green basil - 25-30 leaves;
- - 3 eggs;
- - flour - 150 g;
- - a teaspoon of sugar;
- - 2 tablespoons of olive oil;
- - a pinch of salt;
- - butter.
- For filling:
- - heavy cream - 300 ml;
- - mozzarella - 150 g;
- - ham - 150 g;
- - butter - 3 tablespoons;
- - flour - 2 spoons;
- - salt and nutmeg to taste.
Instructions
Step 1
Put the basil leaves in a saucepan, pour in a spoonful of water and cook over medium heat for 2 minutes under a lid. Squeeze out the liquid and beat the basil in puree using a blender or rub through a sieve.
Step 2
Beat eggs with milk, add sugar and salt. Sift flour to the eggs and mix very well with a whisk. Add the basil, pour in the olive oil, cover the bowl with cling film, set aside for 20 minutes.
Step 3
Grease the pan with butter and bake thin pancakes. Transfer the finished pancakes to a saucepan and immediately close the lid to keep them warm.
Step 4
Cut the mozzarella and ham into cubes of the same size. Fry the ham in 1 tablespoon of butter for a few minutes. In another pan, melt the remaining butter (2 tablespoons), add flour, fry for 3 minutes, stirring occasionally. Pour in the cream and simmer for another 2 minutes. Add the mozzarella, remove from heat and stir to dissolve the cheese a little. Put the ham in the pan, salt and season with nutmeg to taste.
Step 5
Put the sauce in the pancakes, roll them up and serve immediately.
