A rare Russian feast is complete without fragrant herring. Lightly salted or pickled, simply cut into pieces or included in a variety of snacks, this fish is always popular. In modern stores, you can find a fresh product and bake it in foil, getting a very appetizing dietary dish for every day.
Herring oil
Ingredients:
- 200 g fillet of slightly salted herring;
- 100 g butter 82.5% fat (must be of good quality).
In order to save time for preparing a herring dish, you can take not a whole fish, but in pieces. In this case, it should not be in the brine, but in the oil, which must be completely drained.
Remove the butter from the refrigerator and leave to soften for 40 minutes. Gently remove the large bones from the herring fillet and turn it twice in a meat grinder or chop in a blender to get a homogeneous minced fish.
Combine both ingredients in one bowl and rub thoroughly with a fork. Chopped greens, pickled cucumber, green or white onions, capelin caviar, etc., can be added to the finished mass if desired.
Lazy fur coat herring salad
Ingredients:
- 1 slightly salted herring;
- 2 medium potatoes;
- 1 beet;
- 1 carrot;
- 2 pickled cucumbers;
- 1 chicken egg;
- 4-6 tbsp. mayonnaise;
- salt;
- 50 g of hard unsweetened cheese.
Wash the vegetables and cook in different pots over medium heat: beets for an hour and a half, potatoes and carrots for 20-25 minutes. Cook a hard-boiled egg on the third burner and cover it with cold water.
Peel the fish, separate the fillets. Cut all prepared foods and pickles into small cubes and combine in a deep salad bowl. Season the salad with mayonnaise, salt to taste and cover with grated cheese. Let it soak for 30-40 minutes and you can eat.
Light snack herring salad
Ingredients:
- 400 g fillet of slightly salted herring;
- 3 cucumbers;
- 4 radishes;
- 1 tbsp. mustard;
- 1 tsp liquid honey;
- 2 tsp balsamic vinegar;
- 1 tbsp. vegetable oil;
- endive leaves;
- 1 tsp chopped dill;
- salt.
Cut the fish fillets and vegetables into medium cubes. Whisk the vinegar, mustard, honey and vegetable oil in a separate bowl and pour over the main ingredients with this sauce. Season the salad to taste, place on top of the endive leaves and sprinkle with dill.
Baked herring
Ingredients:
- 2 small fresh herrings (200-230 g each);
- 150 g of champignons;
- 1 small onion;
- 1 hard-boiled chicken egg;
- 20 g of chopped parsley;
- 2 tbsp. butter;
- 1 tsp table horseradish;
- salt.
Rinse the mushrooms, peel the onion and egg, chop everything finely, add a little salt and stir with the parsley. Remove the heads from the herrings, cut the fish lengthwise and gut. Rub each carcass with a pinch of salt and stuff with the egg and mushroom filling.
To soften the smell of the herring, sprinkle it with lemon juice before cooking.
Preheat oven to 200oC. Make a butter / horseradish mixture and coat 2 rectangles of foil with it. Place a fish in the center of each silver leaf and wrap hermetically. Place the rolls on a baking sheet and roast the herring for 25 minutes. Serve it along with the resulting juice.
