Traditionally, pancakes are considered a pancake dish, but you can cook them at least every day. To prepare the dough, prepare all the necessary products: three fresh eggs, flour of the highest category. Kefir can be used expired or replaced with another fermented milk product. Take it out of the refrigerator beforehand to warm it up to room temperature. Before cooking, add 0.5 teaspoon of soda to kefir and let stand for a few minutes (while you knead the dough) - it will rise and become fluffy.

Using a mixer, beat three eggs, add salt (0.5 teaspoon) and sugar (1 tablespoon) to the mixture and mix well. Melt 1 tablespoon of butter and pour into beaten eggs. Add a little kefir and 4-5 tablespoons of flour, beat everything again.

Gradually pour kefir into the dough, continuing to stir. The thinner you want to get pancakes, the more kefir (about 0.5 liters). The finished dough does not need proofing; pancakes can be baked from it right away.

Heat the skillet well. If you have a special frying pan with a Teflon coating, you do not need to use additional grease, the pancakes will not stick to the surface. For ordinary dishes, you need vegetable or ghee.

Make sure that the oil is well heated before baking, for example, drip water on the bottom of the pan - it will sizzle and splatter.

Start frying thin pancakes with kefir. Pour the dough into the skillet a little at a time, then spread evenly over the entire bottom so that it lies in a thin layer. Kefir pancakes are baked very quickly, so it is important not to dry them out. When the pancake is browned on one side, gently turn it over.

Put the finished pancakes on a flat plate, greasing each of them with melted butter (if you fried in butter, greasing is not necessary). Please note that the cooled pancakes will begin to stick to each other, in this case they need to be reheated or cut into portions with a knife, like a cake.

Pancakes prepared in this way on kefir have a neutral taste, so they can be filled with almost any filling: minced meat, cottage cheese, caviar or fish.
