    Step 1

It doesn't take much effort to make homemade cottage cheese at home. It is enough to buy fresh milk and spend a little of your time on cooking. First of all, boil the milk, then cool it to a temperature of about 32-36 degrees. To do this, place a container of milk in a saucepan filled with cold water, and periodically measure the temperature with an alcohol thermometer. The thermometer must not have a wooden frame.

    Step 2

As soon as the milk has cooled, proceed to the second stage - directly to the preparation of the curd. Moreover, it can be prepared without sourdough or with sourdough. To make homemade cottage cheese without sourdough, cover the container of chilled milk with a lid and store in a warm place overnight. After a day, place a container with already acidified milk in a large saucepan, filling it with water, and transfer them to the stove. Turn the heat to low and heat the milk until the water in the saucepan begins to boil. At the same time, yellowish whey will form between the milk and the walls of the container. As soon as you see this, remove the pan from the heat. Wait until the resulting dense jelly-like mass has cooled down, cut it into several parts and put it on cheesecloth folded in two. Tie cheesecloth with the future curd mass by the corners and hang over an empty bowl. A day later, homemade cottage cheese is formed in gauze.

    Step 3

To prepare cottage cheese with sourdough, add curdled milk in the proportions of 3 tablespoons per 1 liter of milk to the boiled milk, which is still cooling. Stir the liquid with a metal spoon, cover the container and remove to a warm place. Then repeat the process of serum formation - heat in a water bath until a yellowish substance is formed, wait for it to cool and keep it in gauze for a day.
