If you are pressed for time, it is worth trying to cook fluffy pancakes with kefir, which are also healthier than yeast ones. After all, the beneficial microorganisms that are in kefir will survive when creating such pancakes and will improve digestion.

Step 1
Kefir must be mixed with water and the resulting mixture is heated a little. To prepare lush pancakes, you can use kefir of any fat content, it is only necessary that it be fresh. Sugar, egg, salt are placed in the bowl in which the dough will be mixed, and everything is poured with slightly warmed kefir. All this is thoroughly mixed until foam is formed using a whisk or mixer. The less sugar there is in the dough, the more fluffy the pancakes will turn out.
Step 2
The flour should be divided into 2-3 parts and added to the dough gradually for easier mixing. The dough for making fluffy pancakes on kefir should be homogeneous, without lumps. In terms of density, it should be such that it does not drip from the spoon, but comes off it in a viscous mass, similar to honey. If initially a thinner dough is obtained, then add flour and bring to the required thickness. After that, add soda to it and stir well. The soda does not need to be extinguished.
Step 3
For frying pancakes, it is advisable to use a cast iron or any other thick-bottomed pan. The frying pan and vegetable oil are heated in it. The dough is laid out with a tablespoon, 1 spoon - 1 pancake, but do not spread the dough over the pan. Lush pancakes are prepared on kefir over medium heat and under a closed lid. So they bake better inside and get more magnificent.
Step 4
When frying, the pancakes absorb oil well, so you need to monitor the amount, but, despite this, the pancakes are low-fat. You can additionally use a fork to turn the pancakes during frying, this will prevent oil from splashing on the stove. Pancakes are fried on both sides until golden brown. When ready, fluffy kefir pancakes are greased with butter.
