Vegetarian dumplings are lean and delicious. They are filled with soybeans, mushrooms, finely chopped herbs and vegetables. Try chickpea dumplings.

- - boiled chickpeas - 7-8 tablespoons;
- - onions - 1/2 head;
- - small carrots - 1 piece;
- - dill greens;
- - parsley;

- - wheat flour - 3/4 cup;
- - olive oil - 2 tablespoons;
- - water.
Instructions
Step 1
Rinse the soaked chickpeas and boil for an hour without adding salt. Do not cover the pot with a lid, as this will cause the peas to boil. Cool the boiled chickpeas and mash slightly with a fork.
Step 2
Finely chop fresh dill and parsley and add to the peas. Grate the carrots on a fine grater. Onions should be cut into small cubes. Optionally, you can fry onions and carrots in vegetable oil until golden brown. Combine all ingredients in a deep bowl, adding salt and black pepper to taste.
Step 3
Mix the sifted wheat flour with olive oil and start kneading the dough, gradually adding water. If dumplings with chickpeas are intended for people who do not adhere to particularly strict dietary rules, you can replace water with milk. Most often, vegetarian dumplings are prepared without the use of chicken eggs. Therefore, vegetable oil is added to the dough. To make the dough both firm and elastic enough, knead for about 10 minutes.
Step 4
Roll out the prepared and cooled dough to make a flat cake 2-3 mm thick. Cut the dough into circles using a small glass. Put some minced peas in each circle and make dumplings.
Step 5
Boil water and dip the chickpea dumplings into it. It is advisable to add a tablespoon of vegetable oil to the water so that the dumplings do not stick together. Salt water to taste. Floated dumplings should cook for another 2-3 minutes. Stir the dumplings periodically.
Step 6
Ready vegetarian dumplings are removed from the pan with a slotted spoon and transferred to a deep plate. You can decorate the dish with sprigs of fresh parsley and dill, sprinkle with lemon juice. Vegetarian chickpea dumplings can also be steamed or baked in the oven. Dumplings are served, seasoned with butter, sour cream, mayonnaise.
