- Cottage cheese - 1.5 kilograms;
- Milk - 1.5 liters;
- Egg - 2 pieces;
- Butter - 200 grams;
- Soda - 3-4 teaspoons;
- Salt to taste.
Instructions
Step 1
Pour the milk into a large saucepan, put it on fire and bring to a boil.
Step 2
Put the cottage cheese in the milk and cook, stirring for 4-6 minutes over low heat, until the whey separates.
Step 3
Take a clean gauze, moisten it well in water, fold it in 2-3 layers and cover with a colander.
Step 4
Pour the hot curd mass into a colander covered with gauze.
Step 5
Let the serum drain well, tie the cheesecloth tightly and hang over the sink to drain excess liquid.
Step 6
In a separate bowl, whisk together the butter, eggs, salt and water.
Step 7
When the whey is drained, transfer the curd to a clean saucepan and combine with the beaten mass. Stir.
Step 8
Pour some water into a large saucepan and bring to a boil. Place a saucepan on top, slightly smaller in size, with the prepared curd mass.
Boil the curd mass in a water bath, stirring constantly for 10-12 minutes. The mass should melt and become viscous.
Step 9
Transfer the hot curd to a buttered pan.
Step 10
Press down on top with a light press and refrigerate for 3-4 hours.
Step 11
Carefully remove the finished cheese from the mold and cut into pieces.
