Ingredients (for 2 servings):

  • Octopus 2 carcasses,
  • Garlic,
  • Shallots 3 pieces,
  • Celery 1 bunch,
  • Carrots 1 piece,
  • Lettuce 2 pieces,
  • Thyme branch,
  • Olive oil 300ml,
  • Dry red wine 300 ml,
  • Salt to taste
  • Pepper to taste.

Sequencing:

Remove the eyes and beak from the octopus, rinse the carcasses thoroughly with cold water. Next, the carcasses need to be beaten off a little, for this use the daikon. Chop the celery, carrots, shallots, garlic and thyme into large pieces.

Combine vegetables and sauté in olive oil. Vegetables need to be cooked well, so stir occasionally. Add salt, pepper and thyme.

Put the octopus carcasses in the vegetables (you don't need to cook the octopus before that), add a glass of red wine and leave in the pan for 2 minutes. Next, cover the contents of the pan with a lid and fry for 20 minutes.

While the octopus is cooking, prepare the side dish. Tear off the leaves from the lettuce and cut the core in half, in half. Chop a skillet and fry the lettuce halves with the inside side down in olive oil and garlic.

Place octopus and sauteed lettuce on a plate, top with oil and garlic. Add the juice that the octopus started.
