Low-fat, neutral-tasting octopus meat is rich in proteins and nutrients that seafood contains (fatty amino acids, iodine, phosphorus). It is usually prepared with hot and spicy seasonings that perfectly set off the natural flavor of the octopus.

- For fried Cypriot octopus:
- 1 kg gutted octopus;
- 1 head of onion;
- 4 cloves of garlic;
- 100 g of pine nuts;
- 100 g green olives;
- 1 lemon;
- soy sauce;
- olive oil (for frying);
- salt
- ground black pepper.
- For the fried octopus:
- 500 g of octopuses;
- 2 tbsp vegetable oil;
- 4 heads of onions;
- 2 tablespoons tomato paste;
- 8 large olives;
- 1 tbsp capers;
- 1 tbsp chopped mint;
- 1 tbsp. red wine;
- spices to taste.
- For a roasted octopus:
- 600 g of octopuses;
- 40 g soy sauce;
- 1 tsp sugar;
- 1 clove of garlic;
- green onions (to taste);
- vegetable oil;
- pepper (to taste).
Instructions
Step 1
Cypriot fried octopus Rinse the octopuses with cold running water, cut into small pieces (2x2, 2x3 centimeters), put in a colander so that the excess liquid is glass. Chop the onions into thin half rings, chop the garlic finely, chop the olives into rings.
Step 2
Heat olive oil in a frying pan, fry the onion until translucent, add garlic, olives, and peeled pine nuts, stir, fry for 5-7 minutes, stirring constantly. Add the octopuses, lightly sauté, drizzle with lemon juice and soy sauce, simmer, stirring occasionally, until the liquid is half evaporated, about 10 minutes. Season with salt and pepper.
Step 3
Fried octopus Remove the ink sac and eyes, if the octopus is not gutted, rinse the carcasses under running water, beat the carcasses a little with a hammer, cut into small pieces, about 3 by 3 cm.
Step 4
Finely chop the onions, heat the vegetable oil in a pan, fry the onions until light golden brown, add the chopped octopuses, fry for 8-10 minutes, add olives, capers, spices, tomato paste, stir, simmer until tender for about 1.5 hours, adding red wine when the liquid becomes scarce.
Step 5
Add the minced mint when the octopus is done. Serve with a spaghetti or potato garnish.
Step 6
Spit-roasted octopus Cut the octopus (remove the entrails and eyes), scald with boiling water, remove the skin from the tentacles, cut into pieces 8-10 centimeters long, about 1-2 centimeters wide and 0.5-1 centimeters thick.
Step 7
Chop the onion and garlic, mix with granulated sugar, chopped octopus, pepper, add soy sauce and a little vegetable oil, cover, leave to marinate in a cool place for 40 minutes. String octopus pieces on a skewer, 4-5 pieces at a time, and fry over a fire on a wire rack until tender.
