Classic Uzbek pilaf is very popular in Russia. The dish turns out to be very tasty, satisfying and spicy. The classic pilaf recipe is very easy to prepare.

It is necessary

  • - cauldron for pilaf;
  • - beef fillet 700 g;
  • - vegetable oil 1/3 cup;
  • - onions 2 pcs.;
  • - carrots 3 pcs.;
  • - salt;
  • - ground black pepper;
  • - ground paprika 1 teaspoon;
  • - ground caraway seeds 1 teaspoon;
  • - 3-4 bay leaves;
  • - long grain rice 3 cups;
  • - 1 head garlic;
  • - coriander 1 teaspoon.

Instructions

Step 1

Wash the beef thoroughly, remove the film and streaks. Dry the meat with a paper towel, then cut into 2 cm cubes.

Step 2

Heat vegetable oil in a cauldron and fry the beef pieces for 5-7 minutes. The crust should turn golden.

Step 3

Peel and chop the onion. Add it to the meat, fry until the onions are soft.

Step 4

Peel the carrots, wash and grate on a coarse grater. Add to the cauldron and simmer until the carrots are soft. Then add bay leaves, pepper, salt, paprika and cumin.

Step 5

Add 2 cups of hot water to the cauldron and simmer over medium heat for 45 minutes. The meat should be soft and tender.

Step 6

Rinse the rice thoroughly. Pour rice with meat and vegetables. Top with salt, do not stir, pour 4 cups of hot water, bring to a boil. Then simmer for 10 minutes without a lid.

Step 7

Cut the head of garlic in half across. Insert half a head of garlic into the center of the rice, cut side down, not deep. Sprinkle the rice with 1 teaspoon of coriander. Do not stir.

Step 8

Simmer the rice under the lid for 15-20 minutes. Then remove the garlic and bay leaf, stir the pilaf and serve.
