It is almost impossible to imagine Mediterranean cuisine without vegetables. Many dishes are based on tomatoes, paprika, eggplants, etc. Among this huge list of vegetables, you can also find a rather rare and almost unknown species - okra. How is this exotic vegetable prepared?

It is necessary

    • 500 g of meat (preferably lamb)
    • 500 g okra
    • 1 onion
    • 500 g fresh juicy tomatoes
    • 4 cloves of garlic
    • slice of lemon
    • a couple of bay leaves
    • salt
    • pepper
    • sunflower oil.

Instructions

Step 1

Prepare okra. To do this, first cut off the tails and tops with a sharp knife. The pieces should be no more than 4 centimeters long. Peel them. To help peel off the skin, rinse the okra pieces with hot water for a few seconds.

Step 2

Cut the meat into medium pieces, approximately proportional to the okra. Put the saucepan on high heat, add water, wait until it boils, and lower the meat. Cook it until half cooked.

Step 3

Remove the meat from the pan. Add salt and pepper to the remaining broth to taste. Throw bay leaves. Chop the onions finely. Divide the total amount of onion in half and pour one of them into the broth.

Step 4

Pour sunflower oil into a skillet and put it on fire. When the pan is hot enough, add the other half of the chopped onion and sauté for a couple of minutes. Then add the meat to the onion and fry everything together, stirring carefully and making sure nothing is burnt.

Step 5

Wash the tomatoes and grind them into pulp juice with a blender. Pour the resulting tomato paste into a pan with meat and onions. Continue simmering, bring to a boil, and reduce heat slightly.

Step 6

Now pour the okra to your total mass, stir and pour over the broth so that it covers the vegetables and meat.

Step 7

Season with salt and pepper to your liking and simmer over low heat until cooked through. Determine the moment of readiness by the amount of liquid: it should be very small.

Step 8

When the dish is ready, remove it from the stove. Chop the garlic with a knife or use a special garlic press. Fry it in a separate skillet until light golden brown and add to the main dish.

Step 9

Finally, squeeze the juice out of the lemon and sprinkle it with okra. Place on nice plates, garnish with fresh herbs.
