Roach is one of the most common fish of the carp family, which is found everywhere in the water bodies of Russia. It is dried and rarely cooked in any other way. This fish is ideal for drying.

Instructions
Step 1
Prepare small-sized dried roach (up to 500 grams) without cutting the fish. Rinse the roach in cold water, drain, but do not wipe or dry with napkins.
Step 2
Take 150 to 350 grams of salt per kilogram of fresh fish, depending on how much salt you want. Sometimes a little sugar is added to the salt to obtain a more delicate taste (for one kilogram of fish, about one quarter of a teaspoon).
Step 3
Toss the roach with salt and place in a wide enamel bowl (bucket or tub, stainless steel container).
Step 4
Place a weight on top - a lid with a stone, a wooden circle with any container filled with water. The load is needed so that the fish is constantly immersed in the brine. Leave to salt for one or three days, depending on the size of the fish.
Step 5
Butcher large roach (from 500 grams or more): make a longitudinal incision along the abdomen, remove all entrails, including eggs and milk, rinse in cold water and fill the abdomen with salt, especially carefully rub the fish near the gills.
Step 6
Then put in rows in an enamel dish, belly up, pour salt on top (you can not put the load, cover only with gauze, the fish will be salted in a dry way).
Step 7
Leave the large roach to salt out for three to six days in a cool place. Then soak the salted fish to the desired degree of salinity.
Step 8
Rinse it in cold running water, hold it in fresh water for a while (sometimes the fish is soaked for the same time as it was in the brine), then rinse again and hang to dry.
Step 9
Thread the pieces of wire through the eye sockets and hang in a shady, well-ventilated area. Place the fish loosely on the rope so that the carcasses do not come into contact with each other. Bend the gills outward to speed up the process, insert wooden spacers into the abdomens of the large fish.
Step 10
Hang the fish late in the evening so that it dries up overnight and does not attract flies as much. Use gauze covers to keep out flies, or you can also spread sunflower oil on fish heads as this will fight off the smell that attracts insects.
