  • For the Tarator soup:
  • - 1 liter of kefir;
  • - 2 fresh cucumbers;
  • - 3 cloves of garlic;
  • - 1 bunch of dill;
  • - some parsley;

  • - 1 tbsp. shelled walnuts;
  • - vegetable oil to taste;
  • - salt and pepper to taste.
  • For kefir pancakes:
  • - 250 g of kefir;
  • - 1 tbsp. wheat flour;
  • - 1 egg;
  • - 50g sugar;
  • - 1/3 teaspoon of baking soda.
  • For a kefir and pear cocktail:
  • - 250 g of kefir;
  • - 1 pear.

Step 1

Tarator

A surprisingly light and tasty soup. In the summer heat - just salvation.

Before starting cooking, do not forget to put the kefir in the refrigerator. Cut the peeled fresh cucumbers into small cubes, salt. Send them to the refrigerator too. Cucumbers should be soaked in salt, let the juice in and "cool" a little. Peel the nuts and garlic, chop, mix, add kefir and begin to beat with a mixer. Gradually add vegetable oil in a trickle, about 1/3 of a glass. Beat for a couple of minutes until chubby. Combine with cooked cucumbers. Chop the greens and add to the soup. For beauty, toss a few nuts into the soup. You can pepper. The tarator is ready!

Pancakes or pancakes with kefir

Sift flour into a bowl and mix with baking soda, make a hole in the middle. Break an egg into this well and add sugar. Begin to beat the egg and sugar with a fork, without touching the flour yet. Then, without ceasing to beat, gradually add kefir, making circular movements clockwise with a fork (or better with a thin wooden spoon). Flour will gradually interfere with kefir, turning into a dough with the consistency of thick sour cream. Preheat the pan, brush with vegetable oil and spoon the dough into the pan with a tablespoon. Wait until the pancake appears on the surface of the grooves, then turn over and fry for another couple of minutes until golden brown. Do not overlap the pancakes. Better to change the oil once more. Stir the dough well before placing the next portion of the pancakes. If you are comfortable, make the dough with a mixer. Fritters with kefir are lush and tender. They can be eaten with sour cream, jam, or both.

Kefir cocktail with pear

A very pleasant and healthy drink for children and adults. Take a good ripe pear, remove the seeds and stalk. If the skin is tough, remove it. Cut into pieces and place in kefir. Then beat the drink with a mixer and the cocktail is ready. Instead of a pear, you can put any sweet berries, fruits, jam or syrup. No child will refuse such a cocktail.
