Pancakes cooked without eggs have an airy texture, they are soft, fluffy, and do not fall off. The only disadvantage of such baking is a slightly bland taste. To give it expressiveness, use kefir instead of milk. Naturally, such pancakes will be yeast-free - soda is responsible for the rise of the dough, on which it is better not to save. It is not necessary to extinguish baking soda with vinegar or lemon juice. Kefir will act as a neutralizer of the characteristic taste.

To make the pancakes tasty, fry them in a well-heated, but not hot, frying pan. Use unscented vegetable oil and don't pour too much of it. The ideal option is about a teaspoon for one pancake. Then the product will acquire a delicious crispy crust, but will not be saturated with fat and will not lose volume.

Pancakes with jam

These pancakes are especially delicious with jam, honey, or condensed milk. To avoid burning the dough, do not add too much sugar to it.

You will need:

- 1 glass of kefir;

- 1, 5 glasses of wheat flour;

- 0.25 teaspoons of salt;

- 3 teaspoons of sugar;

- 1 teaspoon of baking soda;

- vegetable oil for frying.

Mix kefir with sugar, salt and soda. Sift flour and add it to kefir in portions. Mix everything thoroughly so that there are no lumps left in the dough. Let the mixture sit for 5-7 minutes. When bubbles appear on the surface, you can start baking.

Add vegetable oil to the pan, heat it up. Form round pancakes with a spoon, fry them on both sides. To check if they are hot, pierce one pancake with a fork. If the inside of the dough is runny, reduce heat and bring baked goods until tender.

Place the baked goods on a flat plate covered with a napkin. Let the excess oil soak and serve on warm bowls. Add a couple of spoons of jam or jam to each serving.
