  • - 100 g butter
  • - 3 tbsp. spoons of honey
  • - 2 teaspoons of baking soda
  • - 450 g wheat flour
  • For the cream you will need:
  • - 1 tbsp. a spoonful of flour
  • - 3 eggs
  • - 350 g sugar
  • - 1 tbsp. spoon of starch
  • - glass of water
  • - 150 g butter
  • - vanillin (pinch)

Instructions

Step 1

Break two eggs into a bowl and add sugar. Whisk them with a blender. Remove the butter from the refrigerator in advance so that it melts. Add it to the eggs along with quick soda. Whisk again until smooth.

Step 2

Put a pot of water on the fire, put a bowl of dough on top and thus create a water bath. Stir the dough constantly, as it warms up, it will darken. This process will take about 20 minutes.

Step 3

Remove dough from heat and let cool slightly, then stir in flour gradually. Don't forget to sift it through a sieve before doing this. Try not to overdo it with flour, the dough should remain a little sticky.

Step 4

Sprinkle flour on the table and knead the dough on it. It should be soft and elastic. Divide the dough into 7 pieces. Roll each one out. Cut an even circle and pierce it with a fork in several places. Bake the cakes for 4 minutes each.

The leftovers from leveling the cakes should also be baked, then grate them. You will get a crumb for decoration.

Combine sugar, flour and starch in a saucepan. Whisk and add a glass of boiling water and put on low heat, as soon as the mass begins to rise and bubble, remove the pan from heat.

Let the cream cool before adding the butter. Stir well. Assemble the cake, spreading cream on each crust and sprinkle with crumbs on top. Let the cake steep, best of all, overnight.
