To make a biscuit cake you will need:
- biscuit cookies - 500 gr.;
- granulated sugar - 2 glasses;
- butter - 1½ pack (about 350 gr.);
- eggs - 4 pcs.;
- orange - 1 pc.;
- lemon - 1 pc.;
- any decorations for the cake.
How to make a cake
Make crumb out of a small amount of cookies (2-3 pieces). Separate the yolks from the proteins and beat with a mixer with sugar. Squeeze juice from the orange and lemon, after grating their zest on a grater - it is also required. Grind the softened butter until a white shade is formed. To it, carefully add the yolks, stirring slightly. Then pour orange and lemon juice into the resulting mass, add their zest and mix everything thoroughly.
Put moistened baking paper in the form and put 1/3 of the whole mass on it. Then lay a row of cookies, lay out the remaining mass (leave a little to grease the top layer) and lay out the cookies again. The mold must be refrigerated, ideally overnight to set. After that, take the cake out of the mold and turn it over carefully. Grease the top with the remaining mass and sprinkle with biscuit crumbs. You can also use melted chocolate or fruits and berries for decoration.
