Buckwheat and minced chicken hedgehogs

Hedgehogs prepared according to this recipe can be called a dietary dish, since low-fat minced meat is taken to create them. Despite the minimum amount of fat in the dish, hedgehogs are very tender and tasty, and all because vegetables - onions and carrots - give juiciness to the food.

Ingredients:

  • 500 grams of lean minced chicken (you can from the breast);
  • 100 grams of dry buckwheat;

In addition, small children can also be treated with food, but only if there is no doubt about the freshness and quality of the minced meat used (for example, if a homemade homemade product is used).

Buckwheat and turkey hedgehogs (minced turkey)

Since turkey tastes rather dry, hedgehogs should be cooked from it in a large amount of gravy. Well, to make the dish not too greasy, it is better to cook the gravy from tomatoes in your own juice and lean vegetable broth. If you are not particularly "worried" about the calorie content of the finished product, then instead of gravy, you can use a filling based on ordinary sour cream or heavy cream - the dish will turn out to be tastier and more satisfying.

Ingredients:

  • 700 grams of turkey fillet;
  • 100-120 grams of dry buckwheat;
  • 300 grams of tomatoes in their own juice;
  • large carrots;
  • medium-sized onion;
  • two tablespoons of tomato paste;
  • 300 ml of broth;
  • salt and pepper.

Step-by-step cooking recipe:

Place the tomatoes in a blender, add broth, tomato paste, pepper, salt to them. Turn on the kitchen appliance for a couple of minutes (it is necessary for the mass to become homogeneous).

Peel the carrots and onions. Grind the turkey and vegetables (use a small-hole attachment). Salt and pepper the minced meat, add washed buckwheat to it and knead it with your hands.

Shape the minced meat into small balls and place them in a thick-bottomed saucepan. Pour the gravy over the hedgehogs so that they are completely covered with it.

Simmer the food under the lid for no more than 40 minutes. Serve hedgehogs as a separate dish.

Hedgehogs with buckwheat and minced meat in a slow cooker in sour cream sauce

To prepare this dish, it is better to use low-fat minced meat, since sour cream appears in the recipe. Replacing sour cream with another ingredient completely changes the taste of the dish, so it is not recommended to replace it, for example, with milk or cream. If you are looking for a simple, but at the same time interesting and unusual recipe for hedgehogs, take a closer look at this option.

Ingredients:

  • 500 grams of minced meat;
  • one onion;
  • one carrot;
  • 1/2 cup buckwheat;
  • one egg;
  • three tablespoons of fat sour cream;
  • glass of water;
  • a tablespoon of flour;
  • salt, pepper, spices - to taste.

Step-by-step cooking recipe:

Cook buckwheat in salted water until cooked through. Peel, chop and fry onions and carrots in a little oil.

Gently mix buckwheat with minced meat, fried vegetables, egg. Season with salt and pepper.

Roll the minced meat into small balls and place them in the multicooker bowl.

Mix water with sour cream, salt the mixture and pour it over the hedgehogs.

Set the baking mode on the multicooker for 40 minutes. 10 minutes before the end of cooking, pour 50 ml of cold boiled water into a glass, add a spoonful of flour to it and beat (it is important that the mass is free of lumps). Pour the mass into the multicooker bowl, while constantly stirring the pouring, wait for the sound signal of the kitchen appliance that cooking is over. Serve hedgehogs on the table even as an independent dish, even with a side dish. The dish goes well with mushrooms and cabbage.

Trick: to add even more creamy flavor to the dish, you can add small pieces of cheese to the hedgehogs. Just when rolling the balls, put a 0.5 by 0.5 cm cube of hard cheese into each piece.
