Potatoes are a herbaceous perennial of the Solanaceae family. A plant that produces edible tubers in harvest. It is a valuable nutritious product that is rich in fiber, starch, minerals, vitamins and other beneficial substances.
More than 250 different simple and original dishes are prepared from it. It is fried, boiled, baked, chips and desserts are made. Used for medicinal purposes, make cosmetic masks. The classic recipe for potato hedgehogs
A typical light cooking option has three ingredients:
- potatoes - 6 pcs.;
- egg - 1 pc.;
- flour - 2 tbsp. spoons.
Cooking method:
- Wash the tubers well, remove the peel, grate on a fine grater, squeeze out the excess liquid a little.
- Add the rest of the ingredients, salt, if desired, sprinkle with a little pepper and stir.
- Spoon the dough into the pan, fry on both sides until golden brown. Do not press down from above.
- Sour cream, herbs or any sauce of your choice can be served with potato pancakes.
In order to preserve the white color of the product, pour a little milk into the dough.
Hedgehogs in the oven
If you want delicious potatoes, unusual and successful, then this recipe is for you. Consider three options for manufacturing in the oven.
Option one.
Products:
- 9 potatoes;
- head of garlic;
- 1 tbsp. a spoonful of Dijon mustard;
- 80 ml of sunflower oil;
- 1 teaspoon of black pepper / coriander / utsho-suneli mixture.
Step by step:
- Wash young tubers thoroughly with a brush, blot with a napkin, make cuts not to the end of the tuber in the form of squares.
- In a bowl, combine the oil, seasonings and one squeezed garlic clove.
- Put the semi-finished product in a baking dish, grease with flavored oil, spread out the slices of unpeeled garlic.
- Bake at 180 degrees for 40 minutes.
Ready-made hedgehogs can be served with toast, vegetables, sauce.
Option two.
Ingredients:
- the main component is the same as in the first version;
- 3 strips of smoked brisket;
- 6 scoops of mozzarella;
- 1 bunch of dill;
- a pinch of red pepper;
- 100 grams of butter.
Step-by-step cooking:
- Wash the vegetable, make longitudinal cuts.
- Divide the balls of cheese into several parts.
- Divide the brisket into pieces.
- Place the brisket and mozzarella alternately in the incisions.
- Finely chop the dill, sprinkle the blank on top.
- If the brisket is lightly salted, add a little salt, sprinkle with pepper.
- Transfer to foil, twist.
- Bake for 30 minutes in an oven preheated to 190 degrees.
- Before serving, unfold the foil halfway.
Option three.
Take the following components:
- the same root vegetable as in the previous recipes - 500 grams;
- ghee - 130 grams;
- salted lard - 100 grams;
- seasoning for potatoes - 2 teaspoons.
How to cook:
- Peel and boil potatoes in salted water.
- Beat with a mixer until puree with butter, add large pieces of bacon and seasoning. Slightly interfere, not zealous.
- On baking paper, divide the mass into slides with a spoon, do not level.
- Bake for 15-20 minutes until golden brown.
Filled hedgehogs
This recipe is very simple and quick to prepare. The result is an incredibly crispy dish with a fragrant filling.
Ingredients:
- potatoes - 5 pieces;
- carrots - 2 pieces;
- onion - 1 piece;
- chicken fillet - 300 grams;
- cheese - 70 grams;
- dill, seasonings - to taste.
Step by step guide:
- Wash all vegetables, peel and grate.
- Rinse greens, blot moisture, chop finely.
- Fillet and onion cut into thin strips, sauté in a saucepan until blush. Add spices, grated cheese and herbs, mix.
- On a hot frying pan, put alternately a spoonful of potato-carrot blanks, filling, again a vegetable mixture.
- Fry until crusty, turn over, darken for 7 minutes.
- Serve sour cream and sauce for the finished dish separately. Bon Appetit!
Potato slices
Homemade version of quick-cooking yummy.
Ingredients:
- 4 potatoes;
- 1 bunch of green onions;
- a pinch of cumin / dill;
- vegetable oil for lubrication.
Cooking instructions:
- Wash the tuber well, cut it almost to the very bottom.
- Place in a glass bowl, brush over each cut and top of the potato with a brush.
- Sprinkle with caraway seeds and salt on top.
- Keep in the microwave for 7-10 minutes until browning.
- Finely chop the green onion feathers, sprinkle the finished hedgehogs on top.
Curly hedgehogs
To decorate a children's festive table, you can prepare beautiful figures. They are served both as an independent dish and as a side dish for chicken, fish, vegetables. It will turn out beautifully, tasty and original.
Components:
- mashed potatoes - 600 grams;
- chicken egg - 2 pieces;
- green part of feather onion - 100 grams;
- mixture of seasonings for potatoes - 1 teaspoon;
- bread crumbs - 2 tbsp. spoons.
Cooking method:
- Combine mashed potatoes with eggs, mix well. There should be a thick mass.
- Form elongated patties, squeeze the hedgehog's nose slightly forward.
- Insert eyes from black peppercorns.
- In a bowl, mix the seasoning with the breading, sprinkle over the body of the figurine.
- Sprinkle chopped onion on a plate, put hedgehogs. Can be served at the table.
Hedgehogs in cheese sprinkles
For an interesting version of the dish, prepare the following components:
- 500 grams of potatoes;
- 150 grams of hard cheese;
- 50 grams of walnuts;
- 70 grams of butter;
- 2 eggs;
- 1 tbsp. a spoonful of dry parsley;
- pepper / turmeric / salt to taste.
Step by step:
- Wash the vegetable, boil in a jacket in slightly salted water. Remove the skin, grate on a coarse grater.
- Dry the nuts a little in a dry frying pan, chop them into small pieces with a knife, add turmeric, shake.
- Season the potato mass with spices, add dry herb powder, eggs, oil. Mix everything, form uneven rounds, roll in a nut powder.
- Put on a silicone sheet, sprinkle with grated cheese, keep in a medium-heated oven until the cheese melts.
