Sweet potato, or as it is also called, sweet potato, goes well with lemon juice and hot spices; it is used for making soups, salads, and snacks. And fried and baked sweet potato roots are an excellent side dish for meat.

    • For the sweet potato puree soup:
    • - 4-5 sweet potatoes;
    • - 1, 5 cups of meat broth;
    • - 1 glass of milk;
    • - 1 tbsp. a spoonful of butter;
    • - 1 tbsp. a spoonful of flour;
    • - 1, 5 teaspoons of salt;
    • - 1 tbsp. a spoonful of sugar;
    • - ginger
    • thyme
    • cinnamon
    • nutmeg to taste.
    • For the sweet potato stew:
    • - 4 sweet potatoes;
    • - 100 ml of vegetable broth;
    • - 1 PC. onions;
    • - 2 tbsp. spoons of parsley;
    • - 1 tsp flour;
    • - half a lemon;
    • - salt
    • parsley to taste.
    • For sweet potato chips:
    • - 2 long thin sweet potatoes;
    • - 2 eggs;
    • - 3 tbsp. tablespoons of flour;
    • - 5 tbsp. spoons of water;
    • - 0.5 liters of vegetable oil;
    • - salt
    • ground red pepper to taste.
    • For sweet balls:
    • - 500 g of sweet potatoes;
    • - 100 g of sugar;
    • - 100 g of raisins.

Instructions

Step 1

Cook for the first sweet potato puree soup. Peel the root vegetables, cover with water and boil until cooked for 20 - 30 minutes. Puree the boiled sweet potato and mix it with butter, flour, sugar, salt and all the spices. Pour the broth and milk over the mixture. Bring the soup to a boil and simmer over low heat for 5-10 minutes. Serve the puree soup hot. Sprinkle with parsley or green onions, if desired.

Step 2

Stew the sweet potato stew as a side dish for the meat. Wash the sweet potatoes and boil in salted water for about half an hour. Drain and let the root vegetables cool. Finely chop the onions and parsley. Heat oil in a skillet and fry the onion until golden brown. Stir constantly, pour in the broth, add flour. Bring the mixture to a boil and cook for about 5 minutes.

Step 3

Peel the sweet potatoes and cut them into small cubes. Add sweet potatoes, parsley, lemon juice and zest to the onion, stir. Let the vegetable stew simmer and simmer for another 3-5 minutes.

Step 4

Serve savory chips for a snack. Wash the sweet potatoes and steam for 15–20 minutes. Mix flour and water and refrigerate for 30 minutes. Beat eggs with salt and pepper. Add the egg mixture to the dough.

Step 5

Heat the vegetable oil in a skillet with high sides. Peel the sweet potatoes, cut into slices about 0.5 cm thick. Using a fork, dip each sweet potato wedge into the dough and deep-fry until golden brown.

Step 6

Offer sweet potato balls for dessert. Peel the sweet potatoes, rinse, cut into small slices and cover with cold water for 15 minutes. After that, steam the sweet potatoes and make mashed potatoes from them. Rinse and dry the raisins. Stir in the sugar and raisins in the puree. Roll small balls from the resulting mass and decorate each with a twist. You can also serve chocolate sauce separately.
