It is necessary
- For 6 servings:
- -3-4 chicken bones, no skin
- -1-2 tablespoons olive oil
- -2-3 celery stalks, chopped
- -2 large onions, chopped
- -2-3 large carrots, chopped
- -2 cloves of garlic, chop
- -2-3 tomatoes, diced
- -1 medium sliced zucchini
- -8 cups chicken stock
- -1 glass of white wine
- -1/2 tsp ground black pepper
- -1/4 teaspoon red pepper
- -1/2 teaspoon thyme
- -3/4 cup rice
- -1 cup frozen corn
- -1 cup frozen peas
- -1-2 cups frozen cauliflower
Instructions
Step 1
In a large saucepan, over medium heat, heat the olive oil and start cooking the chicken bones. After 3-4 minutes, add celery, onions, carrots, garlic, tomatoes and courgettes. Fry for about 5-7 minutes.
Step 2
Add chicken stock, wine, black pepper, red pepper and thyme. Reduce heat to low, cover and simmer for an hour.
Step 3
After an hour: add rice, frozen corn, peas and cauliflower. Simmer for another 20-30 minutes - cooking time will vary depending on the type of rice you are using. For example, brown rice takes longer to cook than white rice. Be sure to check the degree of doneness of the rice before serving.
