  • 1 tsp vanilla sugar;
  • ½ tsp salt.

To fill out you need:

  • 3 tbsp. l. corn starch;
  • 1 glass of cold water;
  • ½ cup granulated sugar;
  • 3 tbsp. l. cold butter;
  • 2 egg yolks;
  • 1 tbsp. l. lemon zest;
  • 3 tbsp. l. lemon juice.

Ingredients for the top cream:

  • 2 egg whites;
  • 1/3 cup water
  • 1 cup granulated sugar;
  • ½ tsp lemon juice;
  • 1 tsp vanilla sugar.

Cooking lemon cupcakes

Preheat the oven to 180-190 degrees. In a large bowl, combine wheat flour, baking powder, and salt. Set dry ingredients aside.

Put softened butter and granulated sugar in a blender bowl, beat until fluffy. Gradually add chicken eggs to the creamy mass, continuing to beat. Add vanilla sugar. Gently add flour mixture, milk and coconut flakes into the butter mass. Make the dough smooth.

In order to make cupcakes, you will need special cups. Brush them with a little vegetable oil, then spread the dough. Place the tins in the oven and bake the cupcakes for 25-30 minutes.

Prepare the filling. Dissolve cornstarch in 1/3 cup cold water and put on low heat. Gradually add the rest of the water and granulated sugar. Add egg yolks to the mixture, continue to cook for 2 minutes, stirring constantly.
