This delicious apricot jam is the perfect accompaniment to your tea. Also, such jam can be used in baking. It is prepared very simply and quickly enough.
It is necessary
- - 1, 2 kg of apricots,
- - 1 kg of sugar,
- - 20 g of apricot kernels.
Instructions
Step 1
Wash the apricots (in this recipe the Honey variety was used). Cut into halves and remove the bones. Split each pit and remove the kernels, rinse.
Step 2
Transfer the peeled apricots to the cooking bowl. Lay the apricots in layers, sprinkle each layer with sugar. At this stage, you will need 500 grams of sugar. Leave the apricots in the bowl for 2-3 hours, during which time they will let the juice out.
Step 3
After 2-3 hours, put the bowl of apricots on a little heat, dissolve the sugar while stirring. After the sugar has dissolved, increase the heat to medium.
Step 4
Let the apricots boil, then stir and simmer twice more, stirring each time. Then remove the bowl of jam from the heat, push the foam towards the center and carefully remove it.
Step 5
Add the remaining 500 grams of sugar to the hot jam, stir, cover with cheesecloth and leave to cool. After 3 hours, put the jam on the fire and repeat the boiling and stirring procedure again. After the 3rd boil, add the kernels of the seeds to the jam and boil for five minutes, remove the foam.
Step 6
Put the hot jam in sterilized jars, cool upside down and put it in the pantry for storage.
