The most difficult thing in this process is to clear the seeds from the berries. Removing them without a special device is a tedious and painstaking job.

    • 1 kg of cherries;
    • 250 g of water;
    • 1.5 kg of sugar;
    • 1 tsp citric acid.

Step 1

Rinse the berry thoroughly. It is better to pre-soak it in cold water for 15-20 minutes, and then rinse it in plenty of running water.

Step 2

Remove all pits from the cherries using a punching machine. There are mechanical and electrical devices for removing from the fruit. If you do not have such a device, use an ordinary hairpin or the blunt end of a metal nib. But removing the seeds manually will take longer and lead to loss of juice.

Step 3

Sprinkle the berries with granulated sugar in an enamel bowl and leave for at least 3-4 hours. You can pour the cherry with ready-made chilled syrup, cooked from water and sugar.

Transfer the candied cherries to a bowl or saucepan and place over low heat. Cook for 15 minutes, removing from heat 2-3 times to infuse the jam. Do not forget to remove the resulting foam. With a high boil, bring to full readiness.

Step 5

Add citric acid 5 minutes before the end of cooking. So that the berries are completely saturated with sugar syrup, soak the jam at room temperature for another 6-8 hours after cooking, before starting to pack them in cans.

Step 6

After the allotted time, pour the cooled jam into hot sterilized jars, seal it tightly with boiled lids. Flip upside down.

Step 7

Cherry jam can be poured into jars and hot. To do this, separate the fruits from the jam through a colander, pour them into jars, boil the syrup. Then pour the cherry syrup over the fruits in the jars. The jam can be sealed.
